Dinner last night was Beef Fajita's. I roasted red and green bell peppers and a red onion with a little olive oil in the oven at 415 degrees for 15-20 minutes.
The beef I pulled out of the freezer and thawed in a warm bath until it defrosted. David had previously Sous Vide it. All I had to do was cut it up and sear it in a pan for a couple of minutes on High until it has a little color to it. I cut up an avocado, heated a couple of corn tortillas on the gas stove burner, covered it all in Peach Salsa and called it dinner.
Corn tortillas and corn chips are usually always Gluten Free. You do have to check the labels just like with everything you take out of a box or bag. I don't refrigerate the tortillas, they seem to stay together better that way. Flour tortillas seem to bother me just light a slice of bread so I don't eat them. I do on occasion buy the flour tortillas for my family because they prefer them.

Welcome to my Gluten Free Blog.
Here you will find weekly menu's with recipes and review's of the Gluten Free products that I try.
This is not a fad diet program. Its a way of life for those of us that cant tolerate Gluten in our diets. I have been "on the wagon" for almost six months and have really felt a difference in my body and want to share my experiences with you.
I would love to say that I have lost weight, but I haven't. I'm not doing it to loose anything, its just so my tummy will stop hurting. I talked to my doctor about taking a test to see if I'm truly allergic to Gluten, and she said there is no real reason to test if I feel better not eating something - then don't. Duh.. Doctor Doctor it hurts when I do this... haha She also mentioned that some insurance plans don't cover the test, so check with your provider before you schedule one.
A little about me: My name is Donna, I'm a 50 something year old mother of two with two grand babies. I have been on every diet in print. Most are too complicated or expensive to maintain. A lot of the recipes you will find here are naturally Gluten Free meaning that none of the product used to make the recipe contain Gluten. Some will have variations that you can make with or without Gluten products. The people pictured wont be super models, just myself and the cook (my loving, caring husband, David)
